OS-Faq, the minimum requirement for anyone just starting in this field.
Intel - From Intel, you can get the very handy
Systems Programming Manual, among other things to help you out. Ordering the manual is free including shipping, so why not pick up a hard copy?
AMD (Advanced Micron Devices) - From AMD you can get their version of the software developer's manuals. At the time, though, it is not possible to order a copy; you may however still download a pdf copy if you intend to develop for the AMD64 platform.
